1/4 teaspoon thyme (optional)

3/4 cup chopped broccoli (fresh or frozen)*
1/3 cup grated cheddar cheese
* If using fresh broccoli, soak in boiling water for 5 minutes until it turns vibrant green. Strain before using. If using frozen broccoli, thaw and squeeze broccoli in a paper towel to remove extra water.
Method:
1. Preheat the oven to 375°F.
2. Spray 6 muffin cups with non-stick spray or grease with margarine or butter.
3. Whisk together the eggs, salt, black pepper, thyme, and garlic powder in a mixing bowl.
4. Add chopped broccoli and mix to combine.
5. Divide into muffin tins filling each about 2/3 full.
6. Sprinkle with cheese.
7. Bake in oven for 12 to 15 minutes until puffed and cooked through.
8. Let cool slightly before carefully removing from muffin tin.

Here’s a simple and delicious way to change up your dinner. Try a traditional burrito bowl over a salad or make your own bowl using a sweet potato! This is easy to freeze (3 to 4 months) and reheat for a later meal.
Makes 6 burrito bowls (either burrito bowl salad or sweet potato burrito bowl)
Prep Time: 10 to 15 minutes
Cook Time: 30 to 60 minutes
Equipment Required:
Stove
Frying pan
Oven (for sweet potato bowls)
Ingredients:
Base:
1 teaspoon oil
1 pound extra lean ground beef or chicken
½ onion, diced finely
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon garlic powder
2 tablespoons tomato paste
1 can (540ml) black beans, drained and rinsed
2 peppers, diced (choose red, orange, or yellow!)
1/4 cup of water
Salt and pepper to taste
Rice bowl:
2 cups cooked brown rice
6 cups of lettuce or salad greens
Sweet Potato Bowl:
3 medium sweet potatoes
Toppings:
Shredded cheddar cheese
Cilantro
Low fat sour cream/ Greek yogurt
Guacamole/ sliced avocado
Diced tomatoes
Lime
Method:
1. Heat a frying pan over medium heat with 1 teaspoon oil.
2. Add ground meat and onion to pan and cook until beef is no longer pink and onions are softened.
3. Stir in the spices, tomato paste, black beans, peppers, and water.
4. Cook for another 5 to 10 minutes, stirring occasionally. Set aside.
Rice Burrito Bowl:
5. Place 1 cup of lettuce in each bowl. Top each bowl with 1/3 cup of the cooked brown rice. Add the burrito mixture, and your favourite toppings.
Sweet Potato Bowl:
6. Cut the sweet potatoes in half, and brush with oil.
7. Place cut side down on the baking sheet.
8. Bake sweet potatoes in a 400°F oven for 20-30 minutes. Flip after 10 to 15 minutes. Potatoes should be soft and easy to poke with a fork.
9. Let sit until cool enough to touch.
10. Scoop out 2 to 3 tablespoons of the middle of the potato to make “bowls”.
11. Place 1 half of the sweet potato on a plate. Top with a scoop of the burrito mixture, and add toppings of your choice.

Makes about 8 kabobs
Prep Time: 10 to 15 minutes
Cook Time: 10 minutes
Equipment Required:
Stove or electric grill
Ingredients:
1 loaf of whole grain bread (unsliced)
6 large eggs
1 cup milk
1 teaspoon vanilla extract (optional)
3 bananas, sliced in 1 inch slices
1 quart strawberries, sliced in half
8 to 12 wooden skewers
1 teaspoon oil, or non-stick spray
Maple Yogurt Dip:
1 cup plain Greek Yogurt
1 tablespoon maple syrup
Method:
1. Start with the full loaf of bread and trim off the end slices.
2. Carefully cut the bread into 1 inch slices.
3. Cut each slice into 4 cubes.
4. In a large mixing bowl, whisk together the eggs, milk and vanilla extract.
5. Add the cubed bread to the milk mixture and soak for 2 minutes, turning to coat all sides of the bread.
6. Heat a large non-stick frying pan or grill pan on medium heat.
7. Spray pan with non-stick cooking spray.
8. Cook French toast cubes for about 2 to 3 minutes per side or until all sides are golden brown.
9. Mix together yogurt with the maple syrup in a small bowl.
10. Make your kabobs. Alternate French toast with fruit.
11. Serve with the Maple Yogurt Dip and extra fresh fruit.

According to a law enforcement press conference today, Cody Wilson, 30, is believed to have traveled to Taipei after learning that he was under investigation for sexually assaulting a 16-year-old. Wilson, who travels frequently, also missed his scheduled return flight.
According to an affidavit filed on Wednesday, Wilson is charged with the sexual assault of a 16-year-old girl in Travis County, Texas. The affidavit describes how Wilson, an Austin resident, began communicating with the alleged victim under the handle “Sanjuro” using the website “SugarDaddyMeet.com.”
The two continued talking via iMessage and Wilson allegedly identified himself to the victim and mentioned that he was a “big deal,” prompting her to find his name featured in recent news stories. In addition to his high-profile role in the debate over 3D-printed firearms, Wilson also attracted attention when he founded Hatreon, a crowdfunding site for fundraisers that violated the rules of sites like Patreon and Kickstarter.
The affidavit, published in full on Ars Technica, details how the two met in person on August 15 at a local coffee shop and Wilson then took the victim to a hotel in a vehicle registered to his company, Defense Distributed. The victim alleges that the sexual assault took place at Austin’s Archer hotel, after which Wilson paid her $500. Surveillance footage corroborates the victim’s story.
Austin’s police department is coordinating with international authorities to bring him back to the country to face the second-degree felony charges, which could be punishable by up to 20 years in prison.
Update: A reporter with the Austin American-Statesman reports that the U.S. Marshals have issued a wanted poster for Wilson.

UK members of parliament have once again called for Facebook’s founder, Mark Zuckerberg, to travel to the country to face questions about how his business operates.
They’re renewing calls for facetime with the Facebook CEO in light of the massive data breach it disclosed on Friday — which the company said could affect as many as 90 million users, with 50M confirmed to have been compromised. It’s not clear exactly how many UK (or European) accounts are involved at this stage.
Facebook said on Friday that it had fixed the flaws, which were introduced after an update in July, and had been exploited by hackers to swipe access tokens. Attackers had been able to use its APIs to scrape some user data, it also said. It reset all potentially affected tokens once it discovered the hack late last month.
Damian Collins, who chairs a UK parliamentary select committee which, earlier this year, spent several months this year interrogating data protection issues, and recently called for a levy on social media platforms to help defend democratic institutions from online disinformation, told the Telegraph: “Facebook’s latest data breach demonstrates more clearly than ever why Mark Zuckerberg should face public scrutiny about the practices and policies his company employs to keep British users’ data safe.”
Julian Knight, another member of the committee, also said: “It would be helpful to hear from Mr Zuckerberg, but I won’t be holding my breath.”
Earlier this year MPs on the Department for Digital, Culture, Media and Sport (DCMS) select committee appealed for Zuckerberg to personally give evidence as they scrutinized the impact of online disinformation on democractic processes. However Facebook repeatedly declined to send its founder — instead sending some alternative staffers, including — finally — its CTO.
The committee was not satisfied, complaining that the reps it sent were unable to answer their questions. Collins also slammed the company for what he described as an evasive “pattern of behaviour” — and “a desire to hold onto information and not disclose it”.
It also kept up its pressure for Zuckerberg to testify — offering the chance for him to answer questions remotely, via video link. Still Facebook declined.
In May, in a pretty extraordinary development, the DCMS committee then told Facebook that if its founder stepped foot on UK soil they would issue him with a formal summons.
Safe to say, Zuckerberg made no trips to the UK, although he did attend a meeting of the EU parliament’s conference of presidents towards the end of May (where he was heckled for also avoiding MEPs’ questions).
Given his record of rejecting invitations from the UK parliament, it seems unlikely the company will suddenly offer its CEO up now — to discuss an awkward security breach to boot.
Though Facebook’s lack of engagement with UK politicians might make the government keener to seize on the committee’s recommendation of a social media levy to offset damage caused by tech platforms’ accelerating online disinformation.

The data breach is the first that falls clearly under new EU-wide privacy rules which carry beefed up penalties for violations.
On Friday, in a statement commenting on the Facebook hack, the UK’s data protection agency said: “It’s always the company’s responsibility to identify when UK citizens have been affected as part of a data breach and take steps to reduce any harm to consumers. We will be making enquiries with Facebook and our overseas counterparts to establish the scale of the breach and if any UK citizens have been affected.”
The company does appear to have abided by the requirements of GDPR to report major breaches within 72 hours of discovery.

(CNN)Novak Djokovic beat Kei Nishikori on Friday night to advance to his eighth US Open men's final.
"I thought in the important moments I came up with some good second serves, some good first serves. I was returning well," Djokovic said after the game. "I was putting (constant) pressure on him, trying to move him around the court, take away the rhythm from him."
Nishikori -- the first Japanese man to reach a US Open semifinal in the Open era -- was a finalist in New York in 2014.
Djokovic will play Argentine Juan Martin del Potro on Sunday, the first time the pair will square off in a Grand Slam final. But a win by either del Potro or Djokovic means the US Open will crown a repeat men's champion -- del Potro won the finals in 2009, while Djokovic was the champion in 2011 and 2015.
Del Potro advanced after defending champion and world No. 1 Rafael Nadal was forced to quit the US Open semifinal because of a knee injury.
"You could imagine it was very difficult for me to say goodbye before the match finishes," Nadal said. "But at some point, you have to make a decision. It was so difficult for me to keep playing at the same time that way, having too much pain."
Historic meeting
On Saturday, 23-time Grand Slam champion Serena Williams will meet Naomi Osaka, who was age 1 when Williams won her first Grand Slam in the 1999 women's final.
Should Williams beat Osaka -- the first Japanese woman to advance to a Grand Slam final -- she will equal Margaret Court's record of 24 Grand Slam singles titles.
"It's honestly really incredible," said Williams, who is ranked No. 26 in the world after a heavily interrupted year following the difficult birth of her daughter, Alexis Olympia.
