French Toast Kabobs with Maple Yogurt Dip [Centre for Healthy Active Kids Recipes]

French toast bites and fresh fruit – on a stick! This is a fun, easy and tasty breakfast for the whole family!

These can be made ahead of time! Store French toast and fruit separately in the fridge for 3 to 4 days. Simply reheat French toast and assemble your kabobs. The maple yogurt is even delicious on its own!

Makes about 8 kabobs

Prep Time: 10 to 15 minutes

Cook Time: 10 minutes

Equipment Required:

Stove or electric grill

Ingredients:

1 loaf of whole grain bread (unsliced)

6 large eggs

1 cup milk

1 teaspoon vanilla extract (optional)

3 bananas, sliced in 1 inch slices

1 quart strawberries, sliced in half

8 to 12 wooden skewers

1 teaspoon oil, or non-stick spray

Maple Yogurt Dip:

1 cup plain Greek Yogurt

1 tablespoon maple syrup

Method:

1. Start with the full loaf of bread and trim off the end slices.

2. Carefully cut the bread into 1 inch slices.

3. Cut each slice into 4 cubes.

4. In a large mixing bowl, whisk together the eggs, milk and vanilla extract.

5. Add the cubed bread to the milk mixture and soak for 2 minutes, turning to coat all sides of the bread.

6. Heat a large non-stick frying pan or grill pan on medium heat.

7. Spray pan with non-stick cooking spray.

8. Cook French toast cubes for about 2 to 3 minutes per side or until all sides are golden brown.

9. Mix together yogurt with the maple syrup in a small bowl.

10. Make your kabobs. Alternate French toast with fruit.

11. Serve with the Maple Yogurt Dip and extra fresh fruit.
