OAT CHEESE AND VEGETABLE STICKS
Serves 4-6
Prep time: 35 minutes
Cooking time: 10 minutes
Ingredients
1 cup chopped mixed vegetables (carrot, zucchini, beans, broccoli or any other as per
availability)
1 cup mozzarella cheese
1 boiled potato
Salt to taste
1 tsp ground black pepper
1⁄2 tsp oregano
1 tbsp whole wheat flour
1⁄2 cup maida
1⁄2 cup oats
Method
1. Blanch the vegetables and keep it aside in the strainer to drain the water.
2. Take a mixing bowl and grate potato and mozzarella cheese. To this, add salt, oregano, crushed pepper powder and blanched mix vegetables. Bind all the ingredients together using 1 tbsp of wheat flour.
3. Shape this mixture into fingers. Keep aside
4. In a large bowl, whisk together 1⁄2 cup maida with 2 1⁄2 cups water and salt, pepper, to avoid any lumps.
5. Dip the vegetable fingers into the batter.
6. Spread oats in a dish. Coat the vegetable fingers with oats. Refrigerate for 20 minutes.
7. Deep fry vegetable sticks into hot oil until they turn golden in colour. This can also be oven baked.
