Serves: 20 mini uttapams
Ingredients:
Capsicum Mixture
¼ cup Capsicum (chopped)
¼ cup Red bell peppers (chopped)
¼ cup Yellow Bell peppers (chopped)
1 tsp curry leaves (chopped)
1 tsp Coriander Leaves (chopped)
1 tsp Oil
Salt to taste
Onion Tomato Mixture
½ cup Onions (chopped)
½ cup Tomatoes (chopped)
1 tsp Curry Leaves (chopped)
1 tsp Coriander leaves
1 Green Chilli (chopped)
Carrot Mixture
½ cup carrots (grated)
1 tsp Curry Leaves (chopped)
1 tsp Ginger (chopped)
1 green chilli (chopped)
Salt to taste
1 tsp Coriander leaves (chopped)
1 tsp Oil
Cheese Garlic Mixture
½ cup Cheddar cheese
1 tsp Parsley (chopped)
1 tsp Garlic (chopped)
1 tsp Piri Piri Seasoning
Other Ingredients
450 gm Uttapam Batter
2 tsp Oil (for frying)
Method:
1. Mix all the ingredients for the toppings in a bowl respectively & keep them aside for later
2. Fill a plastic bottle with dosa/uttapam batter, poke a hole in the lid & close the bottle to form a squeeze bottle for the batter
3. Heat oil in a pan & squeeze out small portions of the batter into the pan
4. Now add the individual toppings & let it fry for 2 minutes
5. Flip them over & continue to cook for 2 mins
6. To serve to stack them up & drizzle with tempered oil (mustard & dried red chillies), serve hot with chutneys
7. Gobble! Gobble! Gobble!
