Healthy Toddler Snacks | Baking Apple Zucchini Muffins with my Toddlers

As busy moms, we are always looking for healthy snack ideas and simple, easy recipes to make at home to promote good nutrition for our toddlers and kids. Today's video is a healthy apple zucchini muffin recipe that is easy to make with the help of your kids. Coconut oil gives this simple healthy zucchini muffin recipe some yummy, healthy fats, and the zucchini sneaks in some extra vegetables and nutrients into your toddler's diet. These muffins are so easy to make and are a good snack idea for kids and moms alike, to keep stored in your fridge for easy, healthy snacking all week long.

The recipe:

1/2 cup coconut oil

1/2 cup milk

2 eggs

4 tbsp agave syrup

2 cups whole wheat flour

1 cup oats

2 tsp baking soda

1 tsp baking powder

1/2 tsp ginger

2 tsp cinnamon

1 large zucchini, grated

1 medium apple, grated

Mix all wet ingredients. Add dry ingredients and grated zucchini and apple. Stir until combined. Grease mini muffin tins with coconut oil spray and then put 1 tablespoon of batter into each muffin hole. Bake for 12 minutes at 375.
